HELLİMLİ &ZEYTİNLİ CAKE

250ml milk
200ml light olive/vegetable/sunflower oil (or a combination)/ light olive/peanut oil
3 large eggs
400g self raising flour/cake flour
1 level tsp baking powder
1 1/2 tsp sugar
1/2 tsp salt
2 tbsp dried mint
Big bunch coriander (4 tbsp) finely chopped / small cut goliandro/ coriander
1 small brown onion, very finely chopped
165g pitted black olives 200g halloumi, cut into small 1cm cubes/hellim, cut into small
25g grated halloumi/hellim
1 heaped tsp sesame seeds
1 heaped tsp Nigella seeds
Whisk the eggs
Add the milk and oil.
Gradually sift in half of the flour and baking powder through a sieve, then the sugar and salt. Add half the flour and baking powder through a sieve. Add the sugar and salt too.
Sift in the remaining flour and baking powder
add the dried mint, halloumi, olives, onion, and coriander and gently mix it all together.
I use a 9 inch cake tin with baking paper.
Sprinkle the halloumi, sesame seeds and nigella seeds over the cake
Bake at 180C (fan), 200C for 40-50 minutes
